Vineyard and terroir
The Carricante grows in Contrada Cavaliere, on the southwestern slope of Mount Etna, at almost 950 metres above sea level.
Vinification
The grapes are harvested by hand in the second half of October, then destemmed and gently pressed. Fermentation lasts 12 days in temperature-controlled stainless-steel tanks, using indigenous yeasts selected from the Benanti vineyard after years of research and experimentation.
Ageing
The wine matures for 12 months in tanks on its fine lees, with periodic stirring, followed by six months in bottle.
