Questo vino
Vineyard and terroir
The fruit comes from selected young vineyards at Cervognano. The alluvial soils are calcareous, with varying proportions of sand, silt and clay. Average planting density is 6,500 vines per hectare.
Grapes
Mainly Sangiovese Prugnolo Gentile, complemented by Merlot. The style combines Sangiovese’s fresh, floral character with Merlot’s fruit notes.
Vinification
The grapes are harvested by hand into crates, destemmed and gently crushed. Fermentation takes place with indigenous yeasts in stainless-steel vats filled to no more than two-thirds of capacity. It lasts approximately one week at 28–30 °C, with pumping over and manual punch-downs.
Ageing
The wine matures for several months in glass-lined concrete tanks, where malolactic fermentation takes place. It receives a light filtration before bottling and is released during the summer following harvest.
Tasting profile
A fresh, fragrant expression centered on floral and fruit aromas.
Serving and pairing
Its freshness and fragrance are best enjoyed within the first four to five years of life.
