Vineyard and terroir
The blend combines fruit from two Tuscan areas. Maremma contributes alluvial sediments rich in red calcareous clay and stones. The Cortona area has silty alluvial soils with clay and a substantial proportion of organic residue.
Grapes
Blend proportions vary by vintage. The blend consists of Viognier and Petit Manseng with a small proportion of Vermentino; exact percentages are not given. The varieties are harvested by hand at different times so that each can be picked at its preferred maturity.
Vinification
Each variety is vinified separately in stainless steel. After destemming, the must undergoes cold static settling, followed by controlled fermentation at 17–18 °C. The stainless-steel process is designed to retain fresh fruit and floral character.
Ageing
Each variety ages separately in stainless steel, with a long stay on fine lees and bâtonnage for approximately 12 months.
