Vineyard and terroir

The fruit is selected from young vineyards at Cervognano. Rather than being tied to fixed vineyard positions, the selection changes among parcels according to the qualities of the grapes in each harvest. These younger-vine lots are chosen for their aromatic intensity, freshness and lighter structure. The soils are calcareous, alluvial and sandy, with varying proportions of silt and clay. Average planting density is 6,500 vines per hectare.

Grapes

Mainly Sangiovese Prugnolo Gentile, complemented by Mammolo. The wine is shaped around Sangiovese’s fresh fruit and Mammolo’s floral and spicy character.

Vinification

The grapes are harvested by hand and transported in crates. After destemming and gentle crushing, fermentation proceeds with indigenous yeasts in stainless-steel vats filled to no more than two-thirds of capacity. It lasts approximately one week at 27–30 °C, with pumping over and manual punch-downs.

Ageing

The wine matures for several months in glass-lined concrete tanks, where malolactic fermentation takes place. It is lightly filtered before bottling and released from March following harvest.

Average annual production is 20,000 bottles.

Tasting profile

A fresh, fragrant and fruit-driven wine, with Sangiovese fruit joined by the floral and spicy notes of Mammolo. The selected young-vine fruit gives an approachable profile with less emphasis on structure.

Serving and pairing

Best enjoyed within four to five years of harvest, while its freshness, fragrance and aromatic character remain most expressive.

Label / history

Produced as Rosso di Montepulciano since 1989, Prugnolo has carried its current label since 2003.
