The Cortese grapes come from young vines in the commune of Gavi.
Vinification
The wine is made by traditional methods. Fermentation takes place in stainless steel tanks under strict temperature control.
Ageing
The wine ages for 3 months in stainless steel tanks, then matures in bottle in the cellar for 4–5 weeks. This bottle rest is meant to develop a refined structure and a balanced taste.
