Vineyard and terroir
Pelaverga is a local variety grown exclusively in Verduno, at the edge of Barolo. Francesco, Giovanni Burlotto’s son, planted three separate vineyards there, each with a different exposure.
Vinification
The grapes are harvested by hand during the first half of October. Fermentation and maceration take place in French oak barrels under temperature-controlled conditions, with daily pump-overs. Malolactic fermentation is carried out in stainless-steel vats.
Ageing
The wine matures for three months in French and Slavonian oak barrels, followed by two months in stainless-steel tanks. It is bottled in the spring after the harvest and rests in bottle for two months before release.
Label / history
The Burlotto estate has produced Pelaverga since 1800.
