Questo vino
Vineyard and terroir
The Pelaverga Piccolo grapes are grown in the municipality of Verduno.
Grapes
Pelaverga Piccolo is used.
Vinification
The grapes are harvested by hand during the final ten days of September, then destemmed and gently pressed. Vigorous fermentation lasts 4–6 days at a controlled temperature no higher than 25 °C. Brief, frequent pumping over is used to preserve the grape’s distinctive aromas. The wine then undergoes malolactic fermentation.
Ageing
The wine rests in stainless-steel tanks for approximately six months.
Serving and pairing
Pair with rustic dishes, cured meats, aged cheeses and flavourful hot dishes that do not overwhelm its aromas and flavours.
