Vinification
Harvest takes place in mid-October, when the berries are fully ripe and their flavours most concentrated. Fermentation starts in stainless steel tanks and finishes in French oak barrels, where malolactic fermentation also takes place.
Ageing
The wine ages for 10 months in new French barriques, then rests a further 3 months in bottle. The ageing adds softness and depth to the texture, with subtle notes of vanilla, toast and sweet spices.
Tasting profile
Rich and layered, combining ripe fruit with mineral freshness and delicate oak notes. The palate shows ripe yellow apple, peach, citrus zest and gentle spice. The texture is creamy and the acidity lively, keeping the wine full-bodied and balanced.
