Vineyard and terroir
The vineyards are situated around Ortona on Abruzzo’s Adriatic coast. The vines face west and south-west, grow in medium-textured calcareous clay soils and are trained to the Pergola system.
Grapes
Pecorino. The variety has approximately 300 hectares planted across Abruzzo and Le Marche. Its name is associated with the traditional resemblance between the grape bunch and a sheep’s head.
Vinification
Crushing and destemming, pressing and cooling to −1°C take place within seconds under an inert atmosphere. The must is clarified statically and fermented at 12°C. Stainless-steel tanks receive 80% of the juice, while the remaining 20% ferments in 40 hL oak vessels.
Tasting profile
Straw yellow with greenish highlights. Aromas centre on white-fleshed fruit, especially pear, accompanied by balsamic and wood-derived nuances.
Serving and pairing
Serve at 10–12°C. Pair with lobster, vegetable potage or cream soups, smoked fish or roast chicken.
