Vineyard and terroir
The vineyards are in the Ortona area on Abruzzo’s Adriatic coast. Guyot-trained vines face east and south-east and grow in medium-textured soils based on limestone and clay. The production area is identified as Ortona, with Soggiorno Proposta Onlus specified in the technical sheet.
Grapes
Montepulciano.
Vinification
Ten percent of the must is drawn off. Fermentation begins at a low temperature to favour the extraction of the polyphenols responsible for colour, then continues under temperature control at 27°C. Malolactic fermentation follows.
Ageing
Approximately six months in barriques, divided between 60% French oak and 40% American oak.
Tasting profile
Ruby red with garnet highlights. The intense, persistent nose combines abundant fruit with spice, chocolate and tar. The palate has good structure, well-defined tannins and balanced proportions.
Serving and pairing
Serve at 18°C. Suitable with cold-cut starters, T-bone steak, gourmet burgers, game, beef Stroganoff with mushrooms or aubergine dishes.
