Vineyard and terroir
The estate farms 26 ha organically, at 300–400 m above sea level with a southwest exposure. The soils are loose clay with deposits of marl. Roots grow easily through this soil and take on the character of the terroir, while the clay retains water, which gives the grapes freshness and roundness.
Vinification
Harvest is entirely by hand. Merlot is generally picked in late September and Sangiovese in early October. The grapes are gently destemmed and carefully pressed, then fermented with selected yeasts in temperature-controlled stainless steel tanks at 26 °C. This gives a soft, fresh taste and preserves the varietal character of the grapes. Maceration lasts 15 days on average. It gives the must its ruby colour and draws aromatic compounds from the skins.
Ageing
The wine matures for 6 months in steel tanks, then spends at least 3 months in bottle, where it develops balance and structure.
