Vineyard and terroir
The grapes come from 16 ha of southeast-facing vineyards in Montepulciano, at elevations of 300–400 metres. The loose clay-limestone soils contain marl, and the vines are more than 20 years old.
Grapes
Selected Sangiovese, Cabernet Sauvignon and Merlot grapes are used.
Vinification
The grapes are harvested by hand from mid-September to early October, then destemmed and gently pressed. Fermentation takes place in stainless steel tanks at a controlled 26 °C with selected yeasts. Maceration lasts 18–20 days.
Ageing
The wine matures for 18 months in 5 hL French oak barrels, followed by a period in 30–50 hL wooden casks and at least six months in bottle.
Serving and pairing
Open the bottle a couple of hours before serving and use a tulip-shaped glass.
