Vineyard and terroir
A Salento interpretation of the region’s long-established Negroamaro rosé tradition. The vines are espalier-trained with spur-pruned cordons.

Vinification
After destemming, the grapes are thoroughly cooled and left in the press for a very brief maceration lasting a few hours. This limited skin contact extracts a delicate pink colour. The free-run must then ferments in temperature-controlled stainless steel at 14–15°C. A targeted thermal inversion during temperature control is used to enhance the thiolic aromatic profile.
Ageing
The wine remains in stainless-steel tanks until bottling.
Tasting profile
Pale, brilliant pink with copper highlights. The delicate, precise bouquet features pomegranate, wild strawberry, citrus peel and rose petals, with Mediterranean herbs and a suggestion of sea breeze in the background. Light and lively on the palate, it is led by freshness and balanced by marine salinity. The finish is clean and thirst-quenching. The broader profile is taut, savoury and dry.
Serving and pairing
Serve at 11°C. Pair with farro salad and grilled vegetables, citrus-scented seafood couscous, sushi and sashimi, white pizza, tomato focaccia, trofie with pesto or herb risotto. Salento dishes include pittule, pitta di patate, octopus salad, scapece gallipolina and frise topped with rocket and capers.
It is intended primarily for youthful drinking but can be kept for one to two years.
