Vineyard and terroir
Selected, hand-harvested grapes from the alluvial plain near the Secchia River in Emilia-Romagna. Gentle pressing provides the free-run must used for this single-variety wine.

100% Lambrusco di Sorbara.
Vinification
The free-run must is clarified, fermented and matured in temperature-controlled stainless-steel vats. Selected yeasts are then added before bottling. Secondary fermentation takes place in bottle, with bottles resting horizontally at a constant 12°C. Lees maturation is followed by disgorgement and dosage with liqueur d’expédition.
Ageing
The product page gives at least 72 months on the lees and says selected yeasts are added after nine months. The selected technical sheet gives at least six months in steel and 36 months on the lees.
Technical data
Vintage 2017. Alcohol is 12.5% vol., with 6 g/L added sugar. Formats are 750 ml and 1.5 L.
Tasting profile
The product page describes a brilliant golden colour, while the newer technical sheet describes pale yellow. Floral notes include chamomile or daisy and violet, with white currant, lime and wild strawberry. The palate is driven by well-integrated acidity, joined by raspberry, redcurrant, lemon peel and rose, before a delicately savoury finish.

Serve at 8°C.
Label / history
The clear-glass bottle is wrapped in red film to protect the wine from light and ultraviolet radiation. The film should remain in place until consumption.
