Vineyard and terroir

Pure Lambrusco di Sorbara from the alluvial plain of the Secchia River in Emilia-Romagna. The finest bunches are selected and harvested exclusively by hand into crates holding no more than 15 kg, then transported with particular care to avoid damage.

Grapes

100% Lambrusco di Sorbara.

Vinification

The grapes undergo gentle pressing with strict juice-fractioning. The free-run must is clarified and fermented in temperature-controlled stainless-steel vats. Following at least six months of maturation in steel, selected yeasts are introduced and the wine is bottled for its second fermentation. Bottles rest horizontally at a constant 12°C. Riddling and disgorgement are followed by dosage with liqueur d’expédition.

Ageing

At least six months in stainless steel and a minimum of 36 months of bottle maturation on the lees.

Technical data

The product page gives 12.5% alcohol, 8.40 g/L total acidity, 2.91 g/L total malic acid, pH 2.85 and 5.30 g/L added sugar. Sulphites are below 80 mg/L. Available formats are 750 ml and 1.5 L.

Tasting profile

Light to intense ruby-red in colour with garnet reflections. Sour or marasca cherry, raspberry or redcurrant, wild rose, cinchona and balsamic nuances shape the aroma. The palate has very fine bubbles and a savoury, compact texture, with creaminess, good body, balance and substantial extract.

Serving and pairing

Serve at 8°C; the technical sheet gives a range of 8–10°C.

Vintage notes

The product page displays the 2014 and 2023 harvests and places harvest in the last week of September, while its longer description says the third week. The selected sheet concerns Vintage 2015.
