Vineyard and terroir

Pure Lambrusco di Sorbara from the alluvial plain of the Secchia River in Emilia-Romagna. Selected bunches are harvested exclusively by hand in small crates and handled carefully in transit.

Grapes

100% Lambrusco di Sorbara.

Vinification

The grapes are softly pressed with careful fractioning of the juice. The must is clarified and undergoes alcoholic fermentation in temperature-controlled stainless-steel vats. After at least six months in tank, selected yeasts are added and the wine is bottled. Refermentation and maturation take place with the bottles horizontal at a constant 12°C. Riddling and disgorgement are followed by the addition of liqueur d’expédition.

Ageing

At least six months in stainless steel and a minimum of 42 months on the lees.

Technical data

Vintage 2020. Alcohol is 12.5% vol., with 5 g/L added sugar. The technical sheet lists a 750 ml format.

Tasting profile

Delicate pale pink, with a gentle mousse and fine, persistent bubbles. Raspberry and wild strawberry meet old rose, pomegranate, grapefruit and a powdery nuance on the nose. The palate is vigorously acidic yet balanced by refined salinity, with good body, structure and an enduring acid-savoury interplay.

Serving and pairing

Serve at 8°C. Its pronounced acidity and savoury profile are presented as particularly food-friendly.
