Vineyard and terroir

Lambrusco di Sorbara from the alluvial plain of the Secchia River in the heart of Emilia-Romagna.

Grapes

100% Lambrusco di Sorbara, selected in the vineyard and vinified as a single variety.

Vinification

The clusters are harvested entirely by hand in boxes holding no more than 17 kg and handled carefully to prevent crushing in transit. Pressing follows strict fractioning criteria. The selected must is clarified before primary alcoholic fermentation in temperature-controlled stainless-steel tanks. Following tank maturation, selected yeasts are added and the wine is bottled for secondary fermentation. The bottles mature horizontally at a constant 12°C before riddling, disgorgement and the addition of liqueur d’expédition.

Ageing

The wine page specifies at least eight months in steel and 84 months of bottle maturation. The current technical sheet instead specifies at least nine months in tanks and more than 70 months in bottle.

Technical data

Quality red sparkling wine made by the Classic Method and finished Brut. The published vintage is 2016 and the alcohol content is 13% vol. The English product page gives 10 g/L added sugar, while its Italian counterpart gives 6 g/L. Available in 750 ml bottles packed six per case.

Tasting profile

Deep ruby red. The broad bouquet evokes preserves of cherry, wild strawberry, currant and raspberry, followed by dried rose and peony, then underbrush, myrtle and cinnamon. The palate is full, enveloping, rich and juicy, with a pronounced fruit texture, balanced freshness and savouriness, and a long, persistent finish.

Serving and pairing

Serve at 8°C; the current technical sheet gives a range of 8–10°C.
