Vineyard and terroir
The Chardonnay and Pinot Noir grow in a hillside vineyard at Riccò di Serramazzoni in the province of Modena, at 650 m above sea level on the Modena side of the Tuscan-Emilian Apennines.
Grapes
70% Chardonnay and 30% Pinot Noir, with the Pinot Noir vinified as white wine.
Vinification
The grapes are harvested exclusively by hand into 15 kg crates and handled carefully to avoid damage in transit. Gentle pressing yields the selected free-run juice, which ferments in temperature-controlled stainless-steel vats. After at least six months of rest, selected yeasts are added and the wine is bottled for secondary fermentation by Metodo Classico.
Ageing
The bottles mature horizontally on the lees for more than 24 months. Disgorgement is followed by dosage with liqueur d’expédition.

White quality sparkling wine, Brut, Metodo Classico S.A. Alcohol: 12.5% vol. Dosage: 4.5 g/L added sugar. Available in 750 ml bottles and 1.5 L magnums.
Tasting profile
A structured, full and intense sparkling wine with a fine, continuous perlage. Its pale straw-yellow colour has greenish highlights. Citrus aromas mingle with yellow-fleshed fruit; another published profile adds lemon, lime and citrus peel, jasmine, peach, mango and candyfloss. The palate is fresh, taut and complex, combining fruit sweetness with mineral and savoury notes. The finish is clean and persistent.
