Vineyard and terroir
Pinot Noir is grown at 650 m in the hillside vineyard at Riccò di Serramazzoni, on the Modena side of the Tuscan-Emilian Apennines. The clayey-calcareous site is planted at 6,000 vines per hectare and trained to espalier.
Grapes
100% Pinot Noir.
Vinification
The best bunches are picked by hand during the last week of August into 15 kg boxes and handled carefully to prevent damage during transport. After gentle pressing of the free-run must, the skins remain in contact with the must for approximately 12 hours. Alcoholic fermentation takes place in temperature-controlled steel vats, without malolactic fermentation. In the following spring, secondary fermentation proceeds on the lees in bottle at constant temperature according to the traditional method. Disgorgement and the addition of liqueur d’expédition follow.
Ageing
The bottles mature for 48 months on the lees at constant temperature.
