Vineyard and terroir
The vineyards grow in the warm, dry Salento peninsula in Puglia. Clay-limestone soils help retain water and keep the vines cooler during the very hot summer, while the day-to-night temperature variation contributes elegance.
Grapes
Malvasia Nera.
Vinification
The grapes are destemmed and crushed, then macerated for 8–10 days at controlled temperature with regular pump-overs. After racking, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 6–8 months in second-use American and French oak barriques.
Tasting profile
Very deep ruby red. The intense, enveloping bouquet recalls cherries, complemented by pleasant clove notes. Full-bodied and initially soft on the palate, it develops complexity while retaining marked freshness.
Serving and pairing
Serve at 16–18°C. Pair with seasonal cured meats, vegetable soups, grilled and roasted meats, stews or flavourful cheeses. It is also suited to a tagliatelle-and-artichoke timbale.
