Vineyard and terroir
The vineyards lie in Salento, Puglia, in an agricultural landscape shared with olive trees and wheat fields. Sandy and clay soils, abundant sunshine and cool sea breezes support ripening and prolonged hang time, contributing aromatic character and vibrant acidity.
Grapes
Negroamaro.
Vinification
The grapes are destemmed and crushed, then macerated for 8–10 days at controlled temperature with regular pump-overs. After racking, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 4–5 months in used American and French oak barriques.
Tasting profile
Ruby red with purple hues. The intense, vinous bouquet combines spice and fruit, with blackcurrant and other dark-berry notes. Medium-bodied and velvety, the palate balances freshness with warmth and finishes with a long, savoury aftertaste.
Serving and pairing
Serve at 16–18°C. Its structure and aromatic intensity suit typical Puglian dishes, especially orecchiette with broccoli rabe and goat cheese.
