Vineyard and terroir
The grapes grow across the Manduria area of Salento, Puglia, on red clay soils. Primitivo ripens early and produces medium-low yields. Its name derives from the Latin primativus, meaning early-ripening.

Vinification
The grapes are destemmed and crushed, then macerated for 8–10 days at controlled temperature with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Tasting profile
Intense ruby red with violet reflections. The bouquet is intensely fruity, recalling small red fruits. The palate is full-bodied, soft, moderately tannic and harmonious. The wine is ready to drink.
Serving and pairing
Serve at 16–18°C. Pair with flavourful cured meats, grilled red meat, game, smoked cheeses and blue or herb-flavoured cheeses. It can also accompany especially savoury seafood, such as swordfish with rosemary.

The name Primitivo refers to the variety’s early ripening, deriving from the Latin primativus.
