Vineyard and terroir
The fruit comes from Carpineto’s own vineyards, situated at around 500 m above sea level on one of the highest sites in the denomination. The north-facing vineyards have sedimentary soils dating to the Pliocene epoch, approximately 15 million years ago, and are enclosed by dense forests that shelter them from westerly winds.
Vinification
The grapes are harvested at optimal ripeness. Fermentation takes place in stainless-steel tanks, with 10–15 days of skin maceration at 25–29 °C. Malolactic fermentation is completed before the wine is transferred to oak in spring.
Ageing
The wine ages in oak barrels from spring until January of the following year, followed by a further eight months in bottle in the winery’s cellars.
