Vineyard and terroir
Nebbiolo comes from 1.40 ha in the San Rocco vineyards in Alba.
Grapes
100% Nebbiolo.
Vinification
Whole clusters are pressed in a pneumatic press with protection from oxidation. After a few hours of skin contact, the free-run must ferments in stainless-steel vats at 16°C. The base wine remains in stainless steel for at least six months. Tirage takes place in April following the harvest, initiating the second fermentation in bottle by the Metodo Classico process.
Ageing
The wine ages in bottle for 18 months before disgorgement.
Technical data
Nebbiolo d’Alba DOC Spumante Rosé, Metodo Classico Extra Brut. First produced in 2020. Formats: 0.375 L, 0.75 L, 1.5 L, 3 L, 6 L, 9 L and 12 L.
Tasting profile
The mousse is abundant, with fine, persistent bubbles. Pale onion-skin colour with golden highlights. The broad bouquet combines rose, dried flowers, dried fruit and bread crust, developing a plum note at warmer temperatures. The palate is full, harmonious and notably savoury, with lively freshness, excellent structure and a long finish.
Serving and pairing
Serve at 9–11°C. Its structure and savoury profile make it suitable throughout a meal.
Label / history
Nebbiolo was historically adapted to sparkling production when long maturation of austere red wines was difficult. The San Rocco interpretation is dry and decisive, using Metodo Classico to express Nebbiolo as a structured rosé sparkling wine.
