Vineyard and terroir
The grapes grow on south-west-facing hillside vineyards in the province of Ascoli Piceno. The sites have firm clay soils and are farmed using certified organic methods.
Vinification
The grapes are harvested at the desired balance, usually between mid and late September. They are gently pressed, and the must ferments at a controlled temperature.
Ageing
The wine rests for three months in stainless-steel tanks, followed by one month in bottle.
Tasting profile
The aroma and palate clearly express the character of Passerina.
