Vineyard and terroir
The fruit comes from vineyards farmed according to certified organic methods.
Vinification
The grapes are usually harvested by hand in mid-to-late September, when sugar, acidity and phenolic ripeness are considered optimal. After pressing, the juice is clarified by cold static settling and fermented at a controlled temperature.
Ageing
The wine rests for four months in stainless-steel tanks, followed by three months in bottle.
Tasting profile
Floral and fruity notes appear on both the nose and palate.
