Vinification
The grapes are harvested in the first half of October, then sorted and destemmed at the winery. Fermentation takes place for 3–4 weeks in open, cone-shaped vats at a controlled temperature.
Ageing
The wine matures for 45 months in oak barrels, followed by 6 months in bottle.
