Grapes
100% Moscato grape must forms the base of the original family recipe.
Vinification
Moscato grapes are pressed immediately after harvest. Pure neutral alcohol is added directly to the must to prevent alcoholic fermentation, leaving the grapes’ natural sugar to provide sweetness while retaining their aromatic intensity.
Herbs and botanical materials—including peel, seeds, roots and flower heads—are infused separately in alcohol for one to two weeks. The process produces approximately twelve extracts, which are tested in different combinations to determine their proportions and balance.
Ageing
The blended vermouth rests for several months to integrate before bottling.

Serving and pairing
Serve chilled at 7–8°C. It can be poured as an aperitif or after a meal with dry pastries and bitter-chocolate desserts. It also pairs with strong, piquant cheeses such as natural Gorgonzola and with cheeses seasoned with herbs or spices.
Label / history
“Bonmè” means wormwood, Artemisia absinthium, in the local dialect. Historically called Moscato all’Assenzio, the drink is now classified as vermouth. Its story is linked to the rural practice of taking medicinal wild herbs: sweet Moscato, commonly kept on farms, softened their bitterness. Before refrigeration was available in the nineteenth century, alcohol also preserved this herbal tonic.
