Questo vino
Vineyard and terroir
Produced at Cascine Drago within the compact Nebbiolo d’Alba production zone, close to the boundary of Barbaresco. The vineyard material comes from plantings made in 1967, 1989 and 1999.
Grapes
100% Nebbiolo. The pure-varietal composition is presented as an important distinction from Langhe Nebbiolo, whose rules allow a minimum of 85% Nebbiolo.
Vinification
The grapes are harvested by hand, destemmed and crushed. Maceration on the skins lasts 10–12 days, reaching a maximum temperature of 28–30°C. Malolactic fermentation is completed before winter.
Ageing
Approximately one year in large oak casks. This maturation gives a wine intended to be more approachable in its early years than Barolo or Barbaresco.
Technical data
Alcohol is 13–14% vol. Total acidity is 5–5.5 g/L, expressed as tartaric acid, and dry extract is 24–26 g/L.
Tasting profile
Garnet red. The complex nose combines plum, spices, red berries, dried rose and violet. The palate is direct and savoury, with substantial tannins integrated into the structure. Good length and persistence lead to a finish of fruit and spice.
Serving and pairing
Serve at 15–17°C in a fairly large glass that allows the wine’s volume to develop. A versatile table wine, particularly suited to pasta with meat sauce and meat-based main courses.
