Grapes

90% Pinot Nero and 10% Nebbiolo. Both varieties are selected for the structure and ageing capacity they can bring to a traditional-method sparkling wine.

Vinification

The grapes are allowed to reach normal technological maturity, achieving a balance between acidity and structure rather than being picked early merely to preserve freshness. Secondary fermentation takes place in bottle.

Ageing

The wine ferments and matures in bottle for at least two years before disgorgement. It is topped up with the same wine, without the addition of liqueur d’expédition.

Alcohol is 12.5% vol.

Tasting profile

A complex, rich, persistent and finely detailed bouquet of bread crust, white flowers and aromatic herbs. The palate is very dry and vinous, with an important yet polished structure. Its full body integrates the sharper edges of the acidity and brings harmony to the wine.

Serving and pairing

Serve at 8–10°C. It works as an aperitif but is conceived above all as a sparkling wine for the entire meal.

Label / history

The wine was inspired by Pietro Colla, father of Beppe and Tino and grandfather of Federica and Pietro. After learning bottle fermentation from a specialist trained in France, he spent his career making traditional-method sparkling wines for leading cellars of his era.
