Vineyard and terroir
The fruit comes from Casetta’s vineyards in the Gavi region, a small area facing the Ligurian Apennines. The vines grow on hillsides at 200–300 m above sea level, in sandy soils with a high proportion of sandy marl.
Vinification
The grapes are harvested by hand in the first half of September, placed in separate crates and taken directly to the winery. After gentle pressing, the juice is immediately separated from the skins. Fermentation takes place in stainless-steel vats at approximately 18 °C.
Ageing
The wine is chilled and transferred to a steel tank for 2–3 months, then cold-stabilised before bottling.
