Vineyard and terroir

Colombaiolo comes from the finest single parcel of the eponymous vineyard at Podere Casisano, in one of the highest and most suitable hillside positions southeast of Montalcino near Sant’Antimo. Old Sangiovese Grosso vines are spur-cordon trained at 5,000 vines per hectare on galestro-rich soil with sandstone inclusions. Each vine is managed individually from rigorous winter pruning through manual selection at harvest. The high site encourages gradual ripening and aromatic finesse.

100% Sangiovese Grosso.

Vinification

Fermentation lasts 20–25 days in 70 hl wooden vats at a controlled 28–30°C, with daily pump-overs and prolonged délestage.

Ageing

Four years in 18 and 25 hl Slavonian oak casks, followed by at least six months in bottle.

Technical data

Alcohol: 14% vol. Total acidity: 5.84 g/L. Residual sugar: 2.22 g/L. Dry extract: 32.67 g/L. Available formats: 750 ml and 1.5 L.

Tasting profile

Deep, intense ruby shading toward garnet. The complex, refined bouquet integrates fruit with sweet spice developed during the long maturation. The palate is austere yet balanced, joining substantial structure to mature, velvety tannins. The finish is fresh and harmonious.

Serving and pairing

Serve at 18°C. Its full-bodied, elegant structure suits red meats, braised dishes, feathered or furred game, particularly with mushrooms or truffles, and long-matured cheeses.

Label / history

Recovery of the estate's old vineyards established Colombaiolo as Casisano's only Brunello di Montalcino Riserva and as an expression of the less widely known southeastern cru area of Montalcino.
