Vineyard and terroir
The Pinot Grigio grapes are selected and grown in Sicily.
Vinification
The grapes are harvested at optimal ripeness and vinified by the "Blush" or "skin-kiss" method, with 24–48 hours of skin maceration. Fermentation takes place in stainless-steel tanks at a controlled temperature.
Ageing
The wine matures on its fine lees in steel vats until bottling.
Label / history
The "Baffo Rosso" range is a tribute from current owner Piergiorgio to his grandfather Umberto, who laid the foundations of the business and was known for his bushy moustache. The red moustache on every label represents the company's commitment to quality and celebrates Umberto.
