Vineyard and terroir
The grapes are grown in vineyards in Tuscany. Hares roam freely through the vineyards and feed on wild herbs, and a farm pond near the winery holds fish and ducks. The winery describes this as a local ecosystem in keeping with its commitment to environmental care and organic farming.
Vinification
The grapes are picked by hand when fully ripe, carefully sorted and gently pressed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. When fermentation is complete, the wine is filtered.
Ageing
The wine is transferred to oak barrels and matures for 12 months in the winery's cellars, where temperature and humidity are carefully controlled.
Label / history
The name comes from an annual event at Poggio al Casone, held over a weekend in February to mark the start of a new season. It celebrates an ancient Tuscan tradition of humane hare hunting, in which hares are trapped without being harmed ("cattura" means "trap" in Italian). Hares were once considered a pest on farmland. The event ends with a feast of local dishes and a bottle of "La Cattura". The label carries a distinctive hare.
