Vineyard and terroir
The grapes are grown in Castellani’s organic vineyards in Sicily, cultivated in accordance with EU organic standards in Italy and without synthetic fungicides, herbicides or fertilizers.
Vinification
The grapes are harvested during the first weeks of September. Fermentation takes place in stainless-steel tanks at a controlled temperature to retain the wine’s characteristic aromas and flavours.
Ageing
The wine undergoes a short period of ageing in stainless-steel tanks under controlled temperature.
