Vineyard and terroir
The grapes come from the Poggio al Casone vineyard.
Vinification
After harvest the grapes are sorted and crushed. Fermentation takes place at a low temperature for 15–20 days, followed by gentle pressing.
Ageing
The wine is not aged in oak barrels.
Label / history
The wine is made in keeping with the winemaking tradition of five generations of the Castellani family. The "Ziobaffa" project grew out of a collaboration with a group of California creatives and aims to share accessible, high-quality Italian wines with the world. Film director Jason Baffa was the first person involved in the project, and the wines are named after him. "Zio Baffa" means "Uncle Baffa" in Italian.
