Vineyard and terroir
The grapes grow on the morainic hills of Veneto, where the subsoils are clay and limestone. The vines are 10–15 years old.
Vinification
The grapes are harvested at the end of August, destemmed and pressed. Cold maceration and settling are followed by fermentation at a controlled temperature. The wine is bottled under sterile conditions.
Ageing
The wine rests for four months in stainless-steel tanks.

The Castel Novo range comprises traditional entry-level DOC and IGT wines.
