Questo vino
Vineyard and terroir
The grapes come from Castelvecchio at Sagrado, in the Carso area of the province of Gorizia. The landscape has arid, rocky Karst soil with only a shallow layer of red sand, enriched by iron and limestone. Constant ventilation and the influence of the nearby sea shape the site.
Grapes
100% Cabernet Franc.
Vinification
The detailed production specification places harvest in the first half of October. Fermentation and approximately 15 days of maceration take place in stainless-steel tanks. The wine then remains in stainless steel for four months while malolactic fermentation is completed.
Ageing
Ageing continues for one year in small French and Californian oak barriques, followed by one year in larger Slavonian and French oak tonneaux. A further six months in bottle precedes release.
Technical data
Available formats are 750 ml, 1.5 L, 3 L and 5 L.
Tasting profile
Ruby red with bright reflections. The varietal character appears through light herbaceous and spicy notes, followed by the mineral nuances associated with the Karst terroir. The palate is fine and spicy, with a long finish. The introductory profile additionally describes an intense, harmonious aroma that develops with ageing and a full, elegant, full-bodied palate.
Serving and pairing
Serve at 18–20 °C. Pair with white meat, roasts and feathered game; the broader introductory recommendation also includes meat and game dishes.
