Vineyard and terroir

The fruit comes from an estate vineyard in the Alanno district, situated at 340 m and facing south and southeast. The vines are trained on a horizontal trellis system. Deep clay soils contain abundant underground rock, and the stated yield is 8 t/ha.

Vinification

The grapes are harvested by hand in mid-October and carefully selected. They are dried for 100 days at low temperature in a dedicated drying room. Fermentation takes place on the skins at 30°C in concrete tanks, with manual pump-overs. Extended maceration continues for up to 40 days.

Ageing

The wine matures for 48 months in 500-litre oak barrels, followed by a further 48 months in bottle.

Tasting profile

The 2012 vintage is an intensely coloured, very dense garnet red. The aromatic profile is markedly spicy, with plum, cherry and herbal notes. Warm and powerful on the palate, it balances substantial tannins and high alcohol with refreshing acidity, leading to an exceptionally persistent finish.

Serving and pairing

Designed as a meditation wine, it may be paired with a small piece of dark chocolate or mature cheeses.
