Vineyard and terroir
The vineyards lie at 340 m with southeastern exposure. Vines are trained using both the traditional Abruzzo pergola and a vertical trellis system. The deep clay soils have a rich texture, and yields are limited to 8 t/ha.
Vinification
Grapes are picked by hand into crates at the beginning of October and dried in a fruit-drying room for approximately 100 days. Fermentation takes place on the skins at 30°C in 150-hl vats, with frequent pump-overs and délestage. Maceration lasts more than 40 days.
Ageing
The stated maturation comprises 12 months sur lie and a further 6 months in vats and/or oak barrels. Bottle ageing exceeds 12 months.
Technical data
Alcohol: 16% vol. Bottle format presented: 750 ml.
Tasting profile
Intense ruby red with violet tones. The concentrated bouquet combines dried-grape notes, spices, liquorice and small forest fruits with nuances of vanilla, chocolate and dried rose. The palate is highly structured, full-bodied and rich, supported by harmonious, elegant tannins. The long, intense and persistent finish recalls preserved fruit and tobacco.
Serving and pairing
Pair with game, grilled meats or medium-aged cheeses.
