Vinification

The bunches are harvested by hand in September and meticulously selected. Fermentation takes place in cement tanks at 30°C with a floating cap and frequent pump-overs. Malolactic fermentation is completed.

Ageing

The wine matures sur lie for 12 months in wooden barrels, followed by another 6 months in tanks and more than 6 months in bottle.

Technical data
