Vineyard and terroir

The estate lies on the outskirts of Castiglione Falletto, at the top of the Bricco Boschis hill in the heart of the Barolo region. Its vineyards occupy 23 of the estate’s 25 hectares. The site is noted for its favourable soil and climate.

Vinification

The grapes are harvested by hand. Fermentation takes place in stainless-steel vats with nine days of skin contact, followed by a total maceration of 20–35 days.

Ageing

The wine matures in Slavonian oak barrels for 3–3.5 years, then rests for another 6–12 months in bottle in the winery’s cellars. The underground ageing cellars maintain natural humidity and a temperature of about 16 °C. Bottles are stored horizontally in ventilated rooms at a constant 14.5 °C and 75% relative humidity.

Label / history

The Cavallotto family has owned the estate for five generations. In 1948, brothers Olivio and Gildo inherited it from their grandfather Giacomo, their father Giuseppe and their uncle Marcello. They were the first local producers to make and sell wine exclusively from their own vineyards. Olivio’s children, Laura, Giuseppe and Alfio, continue the family’s winemaking tradition. Production of the 2020 vintage totalled 18,582 bottles.
