Vineyard and terroir

The fruit comes from the south- and southwest-facing Vignolo vineyard, whose soil is limestone marl. The organically farmed site contains approximately 10,700 Nebbiolo vines planted in 1948 and 1966.

Vinification

The grapes are harvested by hand, destemmed and gently pressed. Fermentation and maceration take place in stainless-steel tanks for 26 days.

Ageing

The 2018 vintage matured for 60 months in large Slavonian oak casks and for a further year in bottle.

Label / history

The Cavallotto estate is situated outside Castiglione Falletto, at the top of the Bricco Boschis hill. The family has owned it for five generations. In 1948, brothers Olivio and Gildo inherited the property from their grandfather Giacomo, their father Giuseppe and their uncle Marcello. They began producing and selling wine using only estate-grown grapes. Olivio’s children, Laura, Giuseppe and Alfio, continue the family’s winemaking.
