Vineyard and terroir

The fruit comes from the Vigna Scot vineyard, a 2.96 ha plot facing east and northeast. It lies on the hills between two other Cavallotto vineyards, Vignolo and Bricco Boschi. Yields do not exceed 33 hl/ha. The grapes are harvested by hand.

Vinification

The grapes are fully destemmed. Fermentation takes place in horizontal and vertical temperature-controlled tanks at 29 °C, using only the yeasts naturally present on the grape skins. Maceration lasts 3–4 days, and the contents are stirred periodically during alcoholic fermentation.

Ageing

The wine spends six months in large 50-hectolitre Slavonian oak casks, then a further 6 months in cement tanks.

Tasting profile

The wine reflects its local terroir and shows that Dolcetto can have the character of a great wine even in its most accessible form.

Label / history

Tenuta Vitivinicola Cavallotto stands on the outskirts of Castiglione Falletto, in the heart of the Barolo region, at the top of the Bricco Boschis hill. The estate covers 25 ha, 23 of them planted with vines, and has belonged to the Cavallotto family for five generations. In 1948 the brothers Olivio and Gildo inherited the estate from their grandfather Giacomo, their father Giuseppe and their uncle Marcello. They became the first growers in the area to devote themselves to producing and selling wine, and from the start they used only grapes from their own vineyards. Olivio's children, Laura, Giuseppe and Alfio, continue the work.
