Vineyard and terroir
The grapes grow in vineyards in Trentino, at 550–700 metres above sea level, with eastern and southern exposures. The Cembra Valley has predominantly limestone soils, and a cool climate marked by substantial day–night temperature differences, cold winters and hot summers. The vines are trained using the Guyot system.
Vinification
The grapes are harvested by hand at optimal ripeness during the final ten days of September. After gentle pressing, the must is settled, then fermented traditionally in stainless-steel tanks at a controlled temperature.
Ageing
The wine rests on its lees for 4–5 months before bottling.
