Vineyard and terroir
The vines grow in the Cembra Valley at 500–600 metres above sea level. The valley's climate is shaped by cold air currents rising from the nearby Alpine ranges, which help the grapes develop their aromatic character. The vines are trained on the Guyot system in deep, fertile, well-drained soils containing porphyry, plenty of clay and organic matter.
Vinification
The grapes are harvested by hand at optimal ripeness, in late September and/or early October. Winemaking begins with several days of cold maceration. Fermentation follows in a range of vessels: amphorae, wooden barrels and stainless-steel tanks. The cap is punched down frequently to extract as much colour and aroma as possible.
Ageing
The wine matures for 12 months in small French oak barrels.
