Vineyard and terroir
The vineyards lie at 330 metres above sea level on limestone soils. They are farmed in strict accordance with organic standards, and yields do not exceed 80 quintals per hectare.
Grapes
Primitivo with a small amount of Aglianico.
Vinification
The grapes are harvested by hand in mid-September. The must is vinified by traditional methods in temperature-controlled steel tanks for 10 days.
Ageing
The wine matures for 12 months in steel tanks, followed by at least 2 months in the bottle.
Tasting profile
Fragrant, fruity aroma with sweet, spicy notes. The taste is lasting.
Serving and pairing
Pairs with Mediterranean dishes and light appetisers featuring white meat and cheese.
