Vineyard and terroir

Alissa comes from hillside vineyards in the Roero zone with eastern exposure at 250 m above sea level. The soils are sandy and calcareous. The vines average 25 years of age and are planted at 4,000 vines per hectare. Yield is 55 hl/ha, and annual production is approximately 4,000 bottles.

Vinification

The grapes undergo soft pressing and static settling. Fermentation takes place off the skins at 18°C.

Ageing

The wine remains on its lees for at least four months.

Technical data

Alcohol is 13%, with acidity of 5.5 g/L. The available format is 0.75 L.

Tasting profile

Muted straw yellow with green highlights. The delicate yet persistent bouquet is fresh, with citrus, tropical fruit and white-flower notes. The palate is full, smooth, persistent and savoury, finishing with a suggestion of hay. Balanced acidity and minerality bring freshness and poise.

Serving and pairing

Pair with fish and shellfish, soups and light starters. Its fragrant, mineral profile also complements Piedmontese cuisine. Cellaring potential is 2–3 years.
