Vineyard and terroir
The vineyards occupy hillsides at 150–300 metres above sea level, with southern, western and north-eastern exposures. The soils are composed of marl and limestone. The San Filippo estate lies south-east of Montalcino.
Grapes
Sangiovese forms the main part of the blend, supplemented by Cabernet Sauvignon and Merlot.
Vinification
Only selected grapes harvested at full ripeness are used. Harvest takes place from late September to early October. The grapes undergo two days of maceration at 10 °C, followed by fermentation in stainless-steel tanks for 4–6 days at 28–30 °C. Malolactic fermentation takes place in cement, stainless-steel and wooden vessels.
Ageing
The wine matures in oak barriques for 12–14 months, followed by at least three months in bottle.
Tasting profile
Elegant and layered.
Label / history
Ancient records state that a parish dedicated to Saint Philip Neri, comprising a house and chapel bearing the same name, was established in Montalcino on 21 April 1672. A little over a century later, the parish's patron, the aristocrat Domenico Franceschini, supplied wine from his cellars four times a year for solemn Masses, indicating that winemaking was already established on the lands of Sant'Antimo.
