Vineyard and terroir
Trebbiano and Malvasia come from estate vineyards planted at 127 metres above sea level. The vines are trained using the cordon-spur system, and the grapes are picked by hand.

Vinification
After harvest, the grapes are dried traditionally on straw mats for at least 90 days to concentrate their sugars. Following pressing, fermentation begins in small caratelli on the madre, a culture of yeasts and bacteria maintained from one year to the next and central to the wine's character.
Ageing
Fermentation and slow maturation continue for 8–9 years in 100-litre caratelli on the madre.

The 2009 vintage has 16.5% alcohol.
Tasting profile
Amber in colour, with an intense bouquet of dried apricot, bitter almond and honey. Its balance lies between overt sweetness and dryness, while lively acidity supports a versatile style at the table.
